Lemony Lentils

Amount per serving: 335 calories & 24 g protein

 

3 Tbsp. olive oil 

1 medium onion, sliced

1 tsp. ground cinnamon

1 lb. dried orange lentils

1 1/2 tsp. chopped ginger

1 1/2 tsp. cayenne pepper 

2 1/2 cups chicken broth

2 cups water

1/2 lemon juice & lemon

 

1. Saute onion and olive oil over medium heat, add cinnamon. 

2. Add lentils, ginger, stir until combined.

3. Add chicken broth and 2 cups water, and lemon juice & lemon.

4. Simmer 40 minutes until done.

5. Serve and enjoy!
